Chiles en nogada: A Patriotic Favorite

Día de la Independencia is still a few months away, but it’s never too early start enjoying chiles en nogada, a delicious dish served with an especially patriotic cream sauce. Its name derived from the Spanish nogal, meaning “walnut tree,” chiles en nogada is made from poblano chilis stuffed with picadillo (a combination of meats, fruits, spices, and aromatics). This base is then adorned with some hefty spoonfuls of the walnut cream sauce nogada and a sprinkling of pomegranate seeds. Together, the seeds, sauce, and chilis comprise the colors of the Mexican flag, red, white, and green.
